Here is a quick use for your left over rice and veggies! Make another dish by just adding a few extra ingredients. You can also purposefully increase the amount of food cooked in the previous meal to increase left overs to make this dish the next day.
You will need:
- rice
- mixed vegetables + potato (all precooked) +salt
- 8 eggs with dash of water and Italian seasoning + salt
- cheese for the topping
First up grease your pan, spread the rice as the base then add the vegetables + potato and sprinkle with the cheese topping. Mix up the 8 eggs with a dash of water and your choice of seasoning. I used Italian. Don’t forget the salt!
Pour the egg mix over the dish and bake at 180 °C ( 350 °F) till ready. Usually a browning cheese topping or a knife comes out clean to indicate the eggs are cooked.
Serve with a salad and enjoy!

This sounds like an interesting dish. I love adding John Soules preccooked chicken and add it to frozen rice for an instant meal. 🙂
