Creative Coconut Ice
Your toddler will love making these fun coconut ice bars with you. They are quick and easy to make, and are delicious!
MAKES:
24 servings (depending on shape of your cookie cutter)
PREP TIME:
10 minutes + chilling time
WHAT YOU NEED:
1 drop of food coloring of your (toddler’s) choice
3 1/2 cups dessicated coconut
1 tin (385g) condensed milk
COCONUT ICE HOW-TO:
Mix the condensed milk, coconut and icing sugar together.
Divide your mixture into halves (or thirds if you want a triple colored/layered slice)
Press half (or third) of your mix into the bottom of a 20cm x 25 cm tin.
Mix the food coloring into the remainder of your mixture and press into the tin ontop of the first layer.
Chill for a few hours, or overnight, until firm.
Cut into fun shapes with a hot cookie cutter.
Your kids will be begging you to help them make this colorful coconut ice again and again!
