Summer is a wonderful time to indulge in watermelons!
Watermelons are also my go to fruit for an ice cream substitute in the summer for my 4 year old, who is a type 1 diabetic.
We usually scoop all the watermelon out with a neat little ball maker for fruit and add them to little bowls with lids in the fridge for eating whenever we feel like. I then use the juicer to get the juice out of the watermelon and leave the fiber behind.
In the past, before the luxury of a juicer we would press the watermelon or blend it and strain to get the juice.
For summer I recommend DIY Popsicle molds for the kids, and adults!
Depending on the sweetness of your watermelon or if you are going to water it down a bit add stevia sweetener or some sugar. Juiced Watermelon and a bit of fresh mint go very well together!
