Do you have that one memory of a recipe that your Grandma would make like no one else? It tasted delicious every single time she made it. One that stores, bakeries or restaurants could not even come close to. One that you would dream about and wish for every birthday or other big celebration? This is one of those.
It’s beyond delicious. It reminds me of Thanksgiving Pecan pie but easier to eat, because it’s in bar form. Bar desserts are my BFF! This recipe is delicious and in no way shape or form will disappoint!
How To Make Delicious Pecan Pie Bars
Ok, before we jump into baking, I have a question for you. Do you say it PEE-CAN or PA-CON? I won’t get into the debate, it’s just funny how it’s a clean and simple break between the two sides. There is no crossing the line either! Either way you say it, own it. It doesn’t matter how you pronounce the word, these bars are still pure gold.
Let’s jump into it, we’ll start with the ingredients.
For the crust:
2 cups all purpose flour
1/3 cup sugar
¼ tsp salt
¾ cup cold butter, cubed
For the filling:
1 cup sugar
1 cup corn syrup
4 eggs
¼ cup butter
2 tsp vanilla
1 ½ cups pecans, roughly chopped
Combine all dry ingredients for the crust in a bowl. Either using a stand mixer, or hand mixer, slowly mix in the cold butter until you get a crumbly mixture.
Place the crust into the pan and pat out even. Bake at 350 for about 12 minutes.
While the crust is in the oven, prepare the filling by adding sugar and corn syrup to a medium sized sauce pan. Bring to a boil for 2-3 minutes. Remove from heat and allow to cool.
In a small bowl, mix eggs slightly and slowly pour into the cooled sugar mixture
Stir in butter and vanilla and allow the butter to melt completely.
Last, add in pecans
Remove crust from the oven and immediately add in the filling to the hot crust.
Bake an additional 20 minutes or until the filling has set.
