Following on from my previous post on Yummy Ciabatta, I thought I would also share the lentil patty they went along with it!
The recipe is from 101 cookbooks, which features the patty as a burger itself. Also do-able, but I thinned out the “patty burger” and made it just a patty.
Ingredients are:
3 cups cooked black lentils
4 large eggs
1/2 teaspoon fine-grain sea salt
1 onion, finely chopped
1 cup toasted fine (whole-grain) bread crumbs
1 tablespoon extra-virgin olive oil (or clarified butter)
I also added about 4 spinach leaves, shredded carrot and some mushrooms.
