My trusty Quick, Tasty And Easy Muffin Recipe is my favorite Saturday indulgence.
I make these almost every Saturday with a variety of of additions such as choc chip, apple and raisins and just with a little added nut spices to vary the flavor. These also fit in well with my 2 year old’s current “finger” food obsession.
I tend to use just a knife / spoon to mix this batter as it is a bit thick for the mixer and I usually land up making it while the baby is sleeping.
My Muffins usually come out more of a golden color due to the brown sugar I use.
I love my silicone molds! No need even to grease it!
I then spoon the mixture into the mold at about 2/3 full.
I advise using a bread board under for transferring it to the oven to avoid that buckling of the mold in transit.
Nice and fluffy yummy muffins!
My current favorite topping is apricot jam with cream cheese!
Quick & Easy Muffins Recipe
Ingredients:
2 cups flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
3/4 cup milk
1/3 cup veg oil
Directions:
Mix ingredients.
Add to muffin pan till 2/3 full and bake at 200 C (400 F) for 18-20 min.
Let cool. Serve with jam and cream cheese.
